White Pizza: California Pizza Kitchen Style

White Pizza: California Pizza Kitchen Style
We recently were shopping in a mall and decided to have lunch at the California Pizza Kitchen. The White Pizza was on the menu and sounded good. Wow! What an amazing flavor.

White Pizza
A combination of Mozzarella, Fontina, Ricotta,
Parmesan and Pecorino Romano cheeses with
sauteed spinach and garlic topped with Applewood smoked bacon

Today I attempted to clone it. I used almost all the ingredients listed on the menu. Started by making the dough early in the morning so it would be ready by lunch.
The results were fantastic! Had the same great taste.
I added a little more of each topping. Next time the only thing I would change is add a little less Ricotta cheese to reduce some of the moisture.

Definitely going to be one of our must have pizzas to make on a regular basis.
